sFLOOR stands for "staked" FLOOR.

To be eligible for rebase emissions, FLOOR must be staked with the FloorDAO protocol. Each staked FLOOR is represented by sFLOOR and can be redeemed 1:1 for FLOOR; thus, the balance of sFLOOR goes up with each rebase.
